    La Muralla is a collaboration of dedicated producers from the breathtaking hills of San Agustín, Huila. Grown at an altitude of 1900 meters, this Papayo variety showcases the exceptional potential of Colombian coffee.

     

    The Papayo beans in this lot are a rare treat, believed to have roots as an Ethiopian Landrace. They undergo a carefully managed 24-hour cherry hold, followed by a 36-hour aerobic fermentation. This is followed by a traditional washed process and slow drying on raised beds for 20 days, ensuring an extraordinary flavor experience.


    Tasting Notes:

    Bright and clean with a juicy limeade-like acidity, this Papayo delivers layers of pomegranate and blood orange sweetness, finishing with a floral clarity that lingers beautifully in every sip.
