    Taste profile:

    Floral and red berry aromatics lead into a vibrant cup with notes of strawberry, clementine, and ripe stone fruit. The texture is juicy and clean, with a focused sweetness and a long, lingering finish.


    Process details:

    • Cherries rinsed, sorted, and floated

    • Fermented in sealed tanks for 48 hours until pH reaches 3.5–3.6

    • Dried for 21–28 days in solar and gas-powered chambers

    • Stabilised in Quito before milling

    Alfonso Villagomez is a Q-grader, environmental consultant, and third-generation steward of San Agustin Estate. He began producing coffee in 2014, transforming his family’s land into a hub for complex, sweet, and fruity profiles.

    Despite extreme rainfall and major crop losses in recent years, Alfonso continues to push boundaries with precise drying techniques rarely possible in this humid region.
