Processing Method:
In this innovative Chilled Cherry fermentation process, cherries are placed in airtight steel tanks lined with jackets that allow the flow of cool water without direct contact. This cooling maintains a consistent environment where microorganisms thrive, ensuring a slow pH decrease and preserving the juicy, fresh fruit profile throughout the fermentation, which can last up to weeks at a consistent 15º Celsius.
