”For the last 4 years we have been deepening our relationship with the team at Cafe Granja la Esperanza. Obviously they excel in bringing exotic Ethiopian varieties to Colombia. Previously they have produced (and we have roasted their) Gesha, Sudan Rume and Sidra.
Now it’s time to fully explore yet another Ethiopian variety - the Java!
When we bought this coffee, we had a subscription exclusive in mind. The history of this coffee variety, rigorous picking and handling on the farm with the drying techniques makes this the perfect competition coffee and suits our subscribers and coffee geeks and pros perfectly.
The coffee that we will release as a subscription exclusive is the Java Natural Anaerobic from our friends at Café Granja La Esperanza in Colombia.
The coffee has gone through a very selective and careful picking. Coffee cherries are collected at the ”Grape” maturation stage for more sweetness and complexity. This is followed by 7 days of fermentation in anaerobic form in sealed tanks.
After fermentation, the coffee is dried in silo to dehydrate the cherries for about 24 hours at an average temperature of 37 °C. Later, the cherries are moves to a parabolic sun dryer for about 20 days. The coffee is left to rest in a temperature controlled warehouse (between 18 °C – 19 °C) for a period of 3 months before being shipped to us in Stockholm, Sweden.
In the aroma you will find soft florals and sweet citrus, in the cup you will find fruity cocoa, plums, sweet citrus, a crisp acidity and a hugely complex and well-structured cup.
