    At the heart of Iris Estate you find the Nirvana LOT, a breathtaking coffee farm nestled in the Volcan region of Panama, at elevations between 1850 and 2300 meters. This high elevation is a big part of the extraordinary quality of the coffees produced at Iris Estate. The estate is a testament to nature’s power, with fertile soil, gentle sunlight, and pure, free-flowing water nurturing each coffee plant. The farm’s philosophy is simple yet profound: let the land care for its growth, and the coffee will naturally express the beauty of its environment.

    The Gesha Legacy

    Panama wasn’t always synonymous with world-class coffee. It wasn’t until the 1960s, when a devastating fungal outbreak led Don Pachi to introduce the gesha variety from Costa Rica, that Panama’s reputation was transformed. Grown in the volcanic soils of Iris Estate, this gesha coffee—especially when paired with Project Origin’s carbonic maceration techniques—becomes a modern-day symbol of exceptional quality, offering a taste that’s nothing short of extraordinary.


    The Nirvana Lot: A Masterpiece of Precision and Patience

    The Nirvana Lot is a gesha coffee that has been meticulously crafted from start to finish. Harvested during Panama’s extended season, from October to April, these cherries are hand-picked at peak ripeness. Only the best cherries, selected through a rigorous process, make it into this exclusive lot. The cherries undergo natural processing, beginning with a nitrogen-flushed fermentation in hermetically sealed tanks, which preserves the coffee’s cell structure and enhances its clarity and delicate profile.


    Artisanal Drying Process

    Post-fermentation, the cherries are spread on a three-tiered raised African bed system at Finca Deborah, where controlled drying conditions—monitoring temperature, heat, humidity, and airflow—ensure the optimal development of flavor. For 20–25 days, the cherries are gently agitated to maintain even drying and prevent mold, until the moisture content reaches a perfect 11%. Afterward, the beans rest in their dried cherry pods in grain-pro bags, absorbing the natural flavors of the fruit before being hulled, sorted, and lightly vacuum-sealed for export.
