    Product Story:

    Iridescence is a testament to the meticulous craftsmanship of Jamison Savage, a globally recognized coffee producer. Grown at an elevation of 1,800 meters in the Volcán region of Chiriquí, Panama, this coffee undergoes a detailed carbonic maceration process to enhance its delicate flavors.

    The cherries are harvested at peak ripeness, de-pulped, and placed in sealed tanks with carbon dioxide to control the fermentation environment. Carefully monitored for temperature and pH, the fermentation process prevents undesirable aromas. After fermentation, the coffee is dried on shaded African beds to protect it from direct sunlight, ensuring a precise residual moisture content of 10.5-11%. The beans are then stored in hermetically sealed bags for 60-90 days to even out moisture content and enhance aromatic development.

    Finally, the parchment coffee is hulled and sorted by size and density, selecting only the finest beans. The result is a coffee with vibrant acidity, balanced sweetness, and notes of apricot, chamomile, and sugarcane.
