Always fresh: This item contains 100 grams divided into 2 x 50 grams of whole beans roasted, packed and shipped on demand for maximum freshness.
Process: The process starts with the harvest of ripe cherries, which are then sterilized using ozonated water and ultraviolet light. After pulping, the coffee is placed in an anaerobic bioreactor for fermentation. Here, Wilton Benitez adds Saccharomyces cerevisiae var. diastaticus, a yeast commonly used in beer and wine, which imparts intense aromas, a spicy character, and citrus attributes. The coffee undergoes anaerobic fermentation for 52 hours, followed by a thermal shock wash.
Post-fermentation, the coffee is dried in a controlled mechanical dryer for 46 hours, ensuring consistent quality and flavor.
Story: Wilton Benitez is a highly specialized coffee producer with a lifetime of experience in cultivating exotic and sought-after coffee varieties. His deep dive into fermentation technology, inspired by wine, beer, and cheese production, has allowed him to master the control of variables such as sugar content, pH level, and fermentation duration in coffee processing.
Wilton’s unique approach involves three key factors: the meticulous fermentation process, the specific microorganisms used at each stage, and a method of soaking the beans in alternating hot and cold water to seal the grain. These innovations result in a coffee with a distinct and exquisite flavor profile, showcasing Wilton Benitez’s dedication to quality and craftsmanship.
