Gildaro, along with his wife Yolanda and their four children, meticulously cultivates their farm, producing exceptional Pink Bourbon coffee. In recent months, they have also planted the renowned Gesha variety, promising even more exciting flavors in the future.
Processing Details:
The cherries are harvested at peak ripeness and floated to ensure quality. Following sorting, the cherries undergo a 30-hour fermentation before being depulped. This is followed by an additional 48-hour oxidation. The parchment is then washed and dried on raised beds for 20-25 days, resulting in a coffee that is both refined and flavorful.
