    Gregorio Sapuyes, known as Don Gregorio, is a true Colombian coffee legend. Originally from San Agustín, Huila, he started working the land at just eight years old, traveling across Colombia to gain hands-on experience in various types of farming.


    When the time came to purchase his own farm alongside his wife, Doña Ana, coffee was the obvious choice—not just for its potential, but because it was his true passion. Over the years, Don Gregorio has developed an intuitive farming philosophy, driven not by trends but by what feels right. His meticulous attention to detail, patience, and commitment to quality make his Pink Bourbon one of the finest washed coffees we’ve tasted.

     

    A Process Focused on Purity & Expression

    Rather than following trendy post-harvest techniques, Don Gregorio lets nature and experience guide him. His washed process is simple, yet executed with absolute precision and care, ensuring a clean, expressive, and well-balanced cup.


    Processing Steps:


    1️⃣ Harvesting – Only ripe cherries are selected to ensure peak flavor potential 🍒

    2️⃣ Overnight Oxidation – Cherries rest overnight in the tolva (hopper), allowing subtle fermentation 🌙

    3️⃣ Depulping – Cherries are pulped the following morning for a clean separation of fruit and parchment ⚙️

    4️⃣ Soaking in Water (2-3 Days) – The beans undergo a gentle 48-72 hour soak, enhancing clarity and brightness 💦

    5️⃣ Solar Drying – The coffee is dried under the sun, naturally stabilizing its flavors ☀️
