The Story Behind the Coffee


Eloy Gutierrez’s journey into specialty coffee is one of passion and dedication. Originally from Caquetá, Colombia, Eloy moved to Timaná, Huila at the age of 15 to live with his father on a coffee farm. In 2000, he took a leap of faith, purchasing a 2-hectare plot of land—a small but promising start.


At first, he focused on cultivating Colombia and Castillo varieties, but his curiosity about coffee quality led him to study at SENA, Colombia’s agricultural education institute, in 2015. There, he discovered Gesha, one of the world’s most celebrated coffee varieties, and was fortunate to source seeds from Central America.


By planting 1,000 Gesha trees, Eloy took on the challenge of growing a variety that requires extraordinary care and precision. Over the years, he learned that Gesha thrives best in the cooler, wetter months, as the additional mucilage in the cherries enhances the complexity and clarity in the cup.


Eloy’s farm is not just about coffee—it is an integrated ecosystem. His bee colonies play a vital role in improving pollination, resulting in stronger plants and better fruit quality.

 

A Gentle Yet Intricate Processing Method


The Double Fermented Washed process used at Mi Refugio is designed to amplify the Gesha’s vibrant characteristics while maintaining its natural delicacy.


Processing Steps:

1. Selective Handpicking – Only the ripest cherries are chosen to ensure quality.

2. Floating & Sorting – Cherries are submerged in water to remove lower-density beans.

3. Cherry Fermentation (48 hours) – The whole cherries undergo a controlled oxidation process in bags to develop fruit complexity.

4. Dry Depulping – Beans are depulped dry to retain a high level of mucilage.

5. Tank Fermentation (48 hours) – Parchment undergoes a second fermentation in tanks, allowing structured acidity to develop.

6. Light Water Wash – A quick 10-15 minute rinse preserves delicate flavors while ensuring clarity.

7. Slow Drying (8 days) – Beans are dried in a controlled environment until they reach 11% humidity, ensuring stability and longevity in the cup.
